It is a hard-cooked cheese made following the technique of traditional long-matured, cooked pressed pasta cheeses (12 months)

Ideal to grate, melt or make a risotto just like with Parmesan except that this is 100% Galician

With natural lactic flora obtained from fresh milk from grazing cows, we obtain a cheese with notes of fruit and nuts with unique conditions for use in gastronomy and as an aperitif cheese.
