The wine "Señorío de Rubiós Sousón" is made with the variety of Retinto (Sousón), from the best plots in the winery in the county sub-area and harvested in its optimum state of maturation and sanitary.
The harvest is destemmed and crushed and then transferred to the self-emptying tanks where it will carry out the alcoholic fermentation at a controlled temperature of approximately 22ºC for 15 days. At the end of this time the wine is bled and the press is pressed to ferment different fractions of the must separately. At the end of the alcoholic fermentation, the wine is transferred to the malolactic fermentation in the absence of waste. The next process is cold stabilization, subjecting the wine to -5ºC in an isothermal tank for a week to precipitate the bitartrates. After that week, the wine is taken out of the cold, filtering through the land and then filtered and bottled.
Visual phase: At sight it presents an intense violet red with a good layer, it is clean and bright.
Olfactory phase: The nose has a high intensity, fragrant and clean, highlighting the wild fruits (blackberry, raspberry).
Taste phase: The palate is a very clean wine, velvety and silky lover with a very fresh acidity well integrated. It has good structure, smoothness and persistence.
